ABOUT THE CHOCOLATE:
Cacao from Papua New Guinea has always stood out with its very unique flavour profile. There is a distinct smokey flavour - one that is imparted through the drying of cacao with the use of a wood fire. This method allows farmers to overcome some challenges presented by a damp and cloudy climate.
When we say smokey, we don't mean 'In your face, day after campfire' smokey, but the subtle, intoxicating aroma experienced when adding freshly dried wood to the fire. The smokey characteristic is subtle, and it adds depth when paired with your favourite scotch!
Upfront you will notice a hit of fruitiness that reminds us of dried cranberries or raisins. Its sweet and slightly tart, but balanced. Notes of molasses linger into the finish, accompanied by a slight smokey, earthy flavour. It's unique, and we love it!
